The Mission at the Bell Restaurant was founded on February 14, 1998 by Jude Lucero and his mother Annabelle. This was one of many restaurants that were a part of the Lucero/Masias name all over the state of Colorado. Over a twenty year span of running the restaurant, Jude kept his business in the same location known to many throughout the town and by many that visited Trinidad for so many of those years. The specialty of the restaurant was, as still is, homemade mexican food with an emphasis on recipes that have been handed down from many generations and everything being prepared with pride and love. In 2002, his nephew Freddie moved from Phoenix and joined Jude in running the business for 16 of those 20 years. In 2018, Jude retired and Freddie and his wife Raye assumed the business with the hopes of keeping it going for another twenty years if not more. In the kitchen today, we are still preparing the same family recipes but also expanding out trying new items on a weekly basis. Also, with the addition of a newly built bar, new and innovative drinks and beverages are a constant to satisfy the diverse crowd that we receive from all around the country.
FAMILY RECIPES MAKE GREAT MEALS
Mexican food: flavorful family recipes that have been passed down through many generations and worked on to be the best product possible. We serve pork green chili that has many different spice levels for all palettes: mild, medium, hot, and extra hot. We also serve a robust and earthy red enchilada sauce that is perfect for vegetarian and vegan options. Specialty sides are spanish rice and fideo (not commonly found on many restaurant menus but a staple in many Mexican households). Specialty meats include our machaca (shredded beef that is slow roasted with peppers, onions, and spices), carne adobada (slow roasted pork that is marinated in a red chili sauce and has tiny hints of cinnamon and brown sugar to give it a surprising twist), chorizo, grilled chicken, and steak. Our two newest concoctions that have taken off would be our Southwest tacos (flour tortilla base with your choice of meat and topped with grilled bell peppers, corn, black beans, tomatoes, and our house made chipotle sauce) and our queso which can be an appetizer or used to smother your entree.
Adult Beverages: We have a full bar and are constantly rotating new and fun beers for all of our beer connoisseurs. Specialty drinks are advertised consistently and many top shelf alcohols are available for any and all drinks. Margaritas, martinis, cocktails etc. Also, liquors that are not to be found at many establishments: green chili liqueur, mango habanero vodka, elderflower liqueur, amaro, and pisco to name a few. Also many imported beers, IPA’s, domestic beers, and flavorful beers (peanut butter porter and maple blueberry stout to name a couple).
